Prep Time: 10 minutes
Fridge time: 10 - 15 minutes

Ingredients:

Granny Delicious Fudge Icing Mix (any flavour)
50g melted butter
2 Tbsp boiling water and 1 Tablespoon Maple syrup
½ a packet Superwine biscuits (or any plain GF biscuits)
½ cup desiccated coconut to coat

Method:

1. Empty fudge mix and extract sachet into medium sized bowl, add melted butter and mix thoroughly, add water 1 tbsp at a time and then the maple syrup, mix until blended

2. Put the biscuits in a plastic bag and crush biscuits with a rolling pin until you have crumbs. (No rolling pin? an empty wine bottle works just as well!)

3. Add the crushed biscuits to the Icing mix and leave for a few minutes to set slightly (makes rolling the balls easier).

4. Roll mixture into bite-sized balls and then roll in coconut*. Set in the fridge for 10 minutes or until set.

These can be made ahead and stored in a covered container in the refrigerator for up to 2 weeks (if they last that long!) Or frozen now until Christmas.

Tips:

*Don’t like coconut? Coat in any type of chopped or crushed nut, cocoa, coffee, what ever you fancy!
