Pecan & Cranberry Autumn Pie
Serves 10 Preparation time 20 minutes Baking time 35-40 minutes
Ingredients: Pastry: 175 gr plain flour 100 gr of butter 1 tablespoon of brown sugar 1 egg yolk, beaten with 1 tablespoon of water
Filling: 1 pottle of Granny Delicious 50 gr of melted butter 2 tablespoons of water 3 tablespoons of golden syrup 3 beaten eggs 175 grams of chopped pecan nuts ½ cup cranberries
Sift the flour into a bowl. Rub in the butter with your hands, until the mixture turns into breadcrumbs. Stir in the sugar. Add the beaten egg yolk and knead lightly to form a dough. Grease a 20 cm round cake tin with butter and line with the dough. Make sure to spread the dough evenly. Put it in the fridge.
Preheat the oven to 190 degrees. Make the Granny Delicious Fudge Icing following the instructions. Add the golden syrup and the eggs and mix thoroughly. Add the pecan nuts and cranberries and mix again. Pour the mixture in the pastry tin, decorate the top with pecan and cranberries and bake for about 35-40 minutes, until the filling is just set. Serving warm with Ice-cream. Seventh Heaven
