Cream Filled Chocolate Fudge Puffs
Prep time 20 minutes Bake time 20 minutes Serves 10 - 15 large cream puffs.
Puffs: 100g of flour 75g of butter 150ml water 3 eggs
Filling: 300ml cream 2 tablespoons of icing sugar
Topping: Granny Delicious Fudge Icing Mix (any flavour): 50g of melted butter 2 tablespoons of water
Preheat the oven on 200 degrees. Put baking paper on an oven tray.
Cut 75g of butter into small pieces. Put in a saucepan together with 150ml of water and bring to the boil. Add the flour and mix until the dough forms a ball. Take off the heat and add 3 eggs one by one. Whisk until you get a firm dough. Put into a piping bag with a large hole and make small piles on the oven tray. Alternatively, you can use 2 moistened tablespoons to pile up the dough balls. Leave enough room for them to grow. Put the tray in the oven and bake for 15-20 minutes. Don't open the oven during baking, as the puffs could collapse. The puffs are ready once they have a golden brown colour. Leave the oven door open and let the puffs cool off slowly.
Whip the cream, add the sugar and mix till firm. Put the cream in a piping bag and make little holes in the puffs. Put the piping bag in the holes and fill each puff with cream.
Make the Granny Delicious Fudge Icing Mix, following the instructions on the pottle. Dip each cream puff carefully in the Granny Delicious mixture and let set in the fridge.
For a dramatic effect, you can make a tower of cream puffs and drizzle the Fudge Icing Mix over it.
